Pesto Sauce

Ingredients
2C Fresh Basil leaves
3 Cloves Garlic, chopped
1/4C Pinenuts, toasted
1/2C Extra Virgin Olive Oil, the best you can afford
1/2C Grated Parmagiano Reggiano
Salt and Pepper

Method
Wash the basil well, and add to a food processor with all of the other ingredients except the olive oil, salt, and pepper.

Slowly add the olive oil through the hole in the top of the processor until you get a smooth paste.

Remove from the processor and season with salt and pepper.

You can store the pesto in a jar with a layer of olive oil on top to prevent browning for 2 or 3 days. You can also freeze the pesto in small containers for up to 3 months.
