Commisso's Chicken Noodle Soup
Ingredients 4L Chicken Stock 1 Carrot, finely diced 1 Celery Rib, finely diced 1 Small Onion, finely diced 3 Sprigs Parsley, finely chopped 2C Shredded Chicken 4tbs Ancini de Pepe (pasta dots) 2tbs Butter Salt and Pepper
Method In a soup pot over medium heat, melt the butter, add the carrot, celery and onions, cook until the onions are translucent, about 6 minutes. Add the parsley, chicken, pasta, and stock. Bring to a simmer and cook until the pasta and carrots are soft, about 20 minutes, season with the salt and pepper.
